CULN 160 – Dining Room and Beverage Service

Class hours: 1 lecture, 2 lecture/lab, 9 lab
Prereq: “C” or higher in or concurrent enrollment in CULN 112.
Description: This course is a study and application
of the variety of service styles such as American, French, and
Russian services and techniques practiced by industry with special
emphasis on the importance of the coordination between the front and
back of the house. This course includes the study of stewarding procedures
and a study of the principles and practices of profitable beverage operations
and the responsibilities and liabilities associated with alcohol service.
